What do we need for our Pineapple Teriyaki Chicken Skewers?

FOR 2 PORTIONS

  • 225 g boneless, skinless chicken breasts, cut into bite-sized chunks
  • 120 g fresh pineapple chunks
  • 1/2 red bell pepper, cut into chunks
  • 1/2 green bell pepper, cut into chunks
  • Wooden skewers, soaked in water for 30 minutes

For the Teriyaki Marinade:

  • 30 ml soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1/2 tablespoon sesame oil
  • 1 cloves garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 1/2 tablespoon cornstarch
  • 1 tablespoon water

How do we make our Pineapple Teriyaki Chicken Skewers?

  1. In a small saucepan, combine the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Heat over medium heat until the mixture begins to simmer.
  2. In a small bowl, mix together the cornstarch and water to create a slurry. Slowly pour the slurry into the simmering marinade, stirring continuously. Cook for 1-2 minutes until the marinade thickens slightly. Remove from heat and let cool.
  3. Place the chicken chunks in a shallow dish or resealable plastic bag. Pour half of the cooled teriyaki marinade over the chicken, reserving the other half for basting. Toss the chicken until evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  4. Preheat the grill to medium-high heat. Thread the marinated chicken, pineapple chunks, and bell pepper pieces onto the soaked wooden skewers, alternating between ingredients.
  5. Lightly oil the grill grates to prevent sticking. Place the assembled skewers on the preheated grill. Cook for 5-6 minutes per side, or until the chicken is cooked through and the vegetables are tender, basting with the reserved teriyaki marinade halfway through cooking.
  6. Once cooked, transfer the Pineapple Teriyaki Chicken Skewers to a serving platter. Garnish with sliced green onions and sesame seeds if desired. Serve hot with steamed rice or a side salad.

You can of course substitute chicken thighs or shrimp for the chicken breasts for a different flavor and texture.
