What do we need for our Pineapple Ice Cream Dream?
For the pineapple ice cream
- 400 g of fresh pineapple chunks
- 400 ml of sweetened condensed milk
- 240 g of heavy cream
- 1 teaspoon of vanilla extract
For the pineapple sauce
- 200 g of fresh pineapple chunks
- 100 g of granulated sugar
- 60 ml water
- Juice of half a lemon
For serving (optional)
- Fresh mint leaves for garnish
- Whipped cream
- Blueberries
How do we make our Pineapple Ice Cream Dream?
Pineapple ice cream
- First, place the fresh pineapple chunks in a blender or food processor and blend until it’s smooth.
- In a large mixing bowl, combine the pureed pineapple, sweetened condensed milk, and vanilla extract. Mix well until everything is fully incorporated.
- Now, in a separate mixing bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the pineapple mixture until it’s smooth and well combined.
- Pour the mixture into a freezer-safe container and cover it with plastic wrap or a lid.
- Next, place the container in the freezer and let it freeze for at least 4-6 hours or until the ice cream is firm.
Pineapple sauce
- In a saucepan, combine the fresh pineapple chunks, granulated sugar, water, and lemon juice.
- Cook over medium heat, stirring occasionally until the pineapple becomes soft and the sauce thickens slightly. This should take about 10-15 minutes.
- After that, remove the pineapple sauce from the heat and let it cool to room temperature. Once cooled, refrigerate it until you’re ready to use it.
Now we put the magic together
- Scoop the pineapple ice cream into serving bowls or glasses.
- Then, drizzle the pineapple sauce over the ice cream.
- If desired, top it with pineapple chunks or a dollop of whipped cream, some blueberries and a fresh mint leaf for garnish.
- Serve immediately and enjoy our refreshing Pineapple Ice Cream Dessert!
