Pineapple Risotto

A creamy cheesy risotto may not be the first thing to come to mind if we are thinking about our delicious pineapple. However, this combination of divine sour sweetness and buttery richness is a real treat for the palate! 😍🤤

What do we need for our Pineapple Risotto?

FOR 4 PORTIONS

  • 1 onion
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 800 ml vegetable broth
  • 250 g risotto rice
  • 1 pinch of turmeric
  • 200 ml medium dry white wine
  • 50 g Parmesan cheese
  • 1/3 very ripe pineapple
  • sea salt
  • pepper
  • 16 black tiger prawns
  • herbs for decoration

How do we make our Pineapple Risotto?

  1. Start by peeling and finely dicing the onion. Heat oil in a pot. Sauté onion and rice in it, stirring, for 1-2 minutes until translucent. Deglaze with some broth and a little wine so that the rice is covered. Simmer over low heat, stirring frequently and add the turmeric. It will give our pineapple risotto the most gorgous yellow colour!
  2. When the liquid is absorbed, gradually add wine and remaining broth, stirring occasionally. Always add the next portion of liquid when the rice has absorbed the liquid. Cook for a total of 30-35 minutes, until rice is tender. Grate the Parmesan cheese. To finish the classic risotto, stir in butter and Parmesan, season with salt and a little pepper.
  3. Dice the pineapple and add it to the risotto. Let it sit for 5-10 minutes and stir occasionally to give the pineapple time to connect with the risotto.
  4. Serve the pineapple risotto onto plates and drape four prawns on each portion. Garnish the dishes with some herbs of your choice.
